Slow cooker cinnamon apple oatmeal

1 cup uncooked organic steel-cut oats (gluten-free, opt.)

3 cups water

1-2 organic apples, peeled and chopped

2 tbsp. pure maple syrup or raw honey

1 ½- 2 tbsp. coconut oil

3/4 tsp. cinnamon

1 tbsp. ground flax seed (optional)

Toppings, as you desire: chopped pecans or walnuts, unsweetened coconut, raisins, banana slices, additional maple syrup, whatever!

Grease the bottom and sides of a small (3 ½ quart) slow cooker with coconut oil or butter. Add everything except the garnishes to the slow cooker. Stir, cover and cook on low for about 7 hours. You can use an automatic timer to shut off.

Gently stir before serving. There may be a little bit of baked oatmeal along the edges – mix it in. Spoon into bowl, add toppings and enjoy.

Kids love a toppings bar: set up small bowls with unsweetened coconut, mulberries or raisins, toasted chopped pecans, maple syrup, honey, cinnamon, sliced bananas…whatever you love!

Store leftovers in refrigerator. Add some almond or coconut milk to reheat it the next day.

Mix it up, go to bed, and wake up to a soul-warming, sugar-free healthy breakfast!
